| Baked tilapia with garlic herb butter, corn, green beans, | |
| blueberries with vanilla greek yogurt. Corn was packaged and | |
| only so-so. Store was out of the good stuff. | |

| Out here on the Left Coast, we haven't had dinner yet. We have | |
| SOOOOOO many cucumbers from the 4 vines I planted (no, they're | |
| not zucchini in disguise, but I wondered about that when I | |
| harvested 7 of them yesterday)...so we are having Chilled | |
| Cucumber Soup with Dill, homemade creme fraiche, and smoked | |
| salmon. And for dessert, some mango sherbet made with coconut | |
| milk, left over from our recent ice cream social. | |
| Now I am HUNGRY, but the durn soup still has to chill for a | |
| while. | |

| So lasagna or other pasta seems to be a theme here. | |
| I made a huge lasagna last night. I have a small garden | |
| consisting only of tomatoes and swiss chard. Both are | |
| overwhelming right now. So I made a sauce with tomatoes (mostly | |
| yellow but a few red), mushrooms, chard, garlic and herbs. And | |
| then since I was using a "no boil pasta" type of lasagna recipe, | |
| I added a nicely arranged top layer of sliced tomatoes - yellow | |
| and red. | |
| It was beautiful and delicious. And I used at least 10 of my | |
| many tomatoes, so it was a win there as well. | |
| And for the record, I always use feta in place of mozzarella | |
| with the ricotta. | |
| I usually make a "Greek" style lasagna, with less basil, more | |
| oregano and a bunch of cinnamon in the sauce. Plus kalamata | |
| olives and either ground beef or ground lamb. Feta, ricotta and | |
| parmesan. So good! | |

| Our veggie sandwich plan failed since a thunderstorm rolled | |
| through - rain I'll grill in but I'd rather not get fried. | |
| Instead we had what has been dubbed "fancy ramen" which is my | |
| new default | |
| I-don't-wanna-do-anything-but-no-I-don't-want-take-out meal. | |
| Cook off a ramen packet, add a 6-min soft boiled egg, shredded | |
| cabbage, corn and chili crisp. Great salty, spicy, crunchy, soft | |
| combo and super fast. | |

| I call that "Asian noodle bowl". I wing my own dashi and we | |
| never eat it anymore because, carbs and it turns out I hate both | |
| zoodles and shirataki noodles, but it used to be one of my | |
| standby "clean out the fridge" meals. | |
