I Made Bread Today
I planned to use tomasino's bread recipe[1], despite not having honey and not reading the recipe
in full, and not using traditional dry yeast.

"I'll just read the differences between Instant yeast and Active Dry yeast"
"I'll just substitute sugar for honey"
"I'll just dump all three cups of flour in at once"
"I'll just use the Kitchen-Aid instead of mixing by hand"
"I'll just mix on 'stir' for 5 of the 10 minutes, instead of '2' for all of it"
"I'll just put the Warming Center at highest heat"
"Whoa that's rising like an Our Gang attempt at baking!"
"I'll just let the dough rise for 15 minutes more, skipping second rise."
"i'll just see what James Beard says in his 'Fireside Cookbook'. Oh, 375 degrees
for 50-55 minutes."
"I'll just drizzle some melted butter on top."
sorry, tomasino, but I DID print and read your recipe.
the loaf was not 'well-formed' as the dough lacked elasticity
but the crust was golden, and crusty, the bread inside fluffy white
and my husband ate my baking for the first time in four months.
