The mail server would recevie the mail and shove it into the pop3 'boxes' ready
for collection
for pop3 customer's  or store it the smtp mail boxes for smtp customer's

How you store the info on the server and how ong you keep it etc is up to you
as long as it sends and recevies correctly when requested and sends valid
command's to the client or other mail server.
