MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: The Ritz-Carlton's Blueberry Muffins
Categories: Breads, Fruits, Snacks
     Yield: 16 servings

 3 1/2 c  Sifted A-P flour
     2 tb Baking powder
   3/4 c  Sugar
       pn Salt; opt
     5 lg Eggs; slightly beaten
   1/2 c  Milk
     5 oz Unsalted butter; melted,
          - cooled
     5 c  Blueberries, fresh or
          - frozen
          Add'l sugar for topping

 Set oven @ 425oF/218oC.

 Mix all dry ingredients together. Stir in eggs, milk and
 butter; do not overmix. Carefully stir in berries.

 Grease the top of large muffin tins. Insert paper cups
 and spoon batter to the top of the paper cups. Sprinkle
 generously with sugar.

 Reduce heat to 400oF/205oC, place muffin tins on middle
 shelf of oven. Bake about 25 minutes, until muffins are
 golden brown. Remove from muffin tins and cool.
