MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Mediterranean Rack Of Lamb
Categories: Lamb/, Mutton
     Yield: 4 servings

     3 lb (2) racks of lamb
   1/4 c  Grated lemon zest
   1/4 c  Minced fresh oregano
          +=OR=+
     4 ts Dried oregano
     6 cl Garlic; minced
     1 tb Olive oil
   1/4 ts (ea) salt & pepper
          Fresh oregano & lemon
          - slices; opt

 Set oven to 375oF/190oC.

 Place lamb in a shallow roasting pan. In small bowl,
 combine the lemon zest, oregano, garlic, oil, salt and
 pepper. Rub over lamb.

 Bake 30-40 minutes or until meat reaches desired
 doneness (for medium-rare, a thermometer should read
 135oF/57oC; medium, 140oF/60oC; medium-well,
 145oF/63oC). Let stand 5 minutes before cutting. If
 desired, serve with fresh oregano and lemon slices.
