1/2 c Unroasted cashews;
- coarsely ground
2 c Water
1 tb Agar-agar flakes
1/4 c Honey
1/4 ts Salt
1/2 c Coconut; freshly grated
1 ts Vanilla extract
Mix cashews and water in a pan. Add agar flakes and boil until they
dissolve. Slowly stir in all other ingredients, except the honey.
Cook over low heat, stirring constantly. Remove from heat, add honey,
and pour into separate bowls. Cool until set and serve.
