   1/2 c  Green plantains; raw
   1/2 c  Snake gourd
   1/2 c  Pumpkin
   1/2 c  Ash gourd
   1/2 c  Green papaya
   1/2 c  Carrots
   1/2 c  Green beans
   1/2 c  Turnips
   1/2 c  Potatoes
 1 1/2 c  Yogurt
     1 ts Salt
     1 ts Turmeric
     1 tb Curry leaves
     2 tb Unsalted butter
     2 c  Water

   1/2 c  Fresh coconut; grated
     1 tb Onion; chopped
     1    Serrano
   1/2 ts Cumin seeds

 Masala:

 Grind all ingredients together in an electric grinder and add to the
 yogurt.

 Aviyal:

 Aviyal is a curry made with a mixture of different South Indian
 vegetables. We have listed a variety of vegetables from which 5 or 6
 may be used, depending on availability.

 Remove skin from all vegetables and chop into 2" pieces, each 1/2"
 thick. Mix the masala into the yogurt, stir well, and set aside.

 In a large flat-bottomed pan, cook the vegetables and fruits with
 salt and turmeric in water on high heat. When vegetables are almost
 cooked, add the masala and mix well. When just about to boil, remove
 mixture from the heat. Season with butter and garnish with curry
 leaves. This curry should be fairly thick.
