     Title: Ash Gourd Soup

     Yield: 1 Batch

     2 c  Ash gourd
          - (benincasa hispida);
          - diced
     1 sm Onion; chopped
     1    Celery rib; chopped
     1 ts Ginger; grated
     1 tb Ghee
     2 c  Water
          Salt and pepper; to taste

 All gourd vegtables are extremely alkaline. The ash gourd is highly
 recommended, even for invalids. Gourd soups are very good for
 balancing the acid-alkaline state in the body.

 Peel and dice the gourd. Put gourd pieces in a pressure cooker with
 water, ginger, and half of the onion. Cook for 2 minutes after
 reaching full pressure. Put through a blender and keep aside. In a
 separate pan, saute the remaining onion and celery in ghee. Add the
 gourd mixture and salt and pepper to taste.
