     Title: Indian Spiced Quinoa With Raisins And Pine Nuts

     Yield: 4 Servings

     1 tb Olive oil -OR-
   1/4 c  Water
     2 lg Shallots; minced
     1 ts Fresh ginger; minced
 1 1/2 c  Quinoa; rinsed; drained
   1/2 ts Ground cardamom
   1/2 ts Ground coriander
   1/4 ts Ground cumin
   1/4 ts Cayenne
     3 c  Vegetable broth or water;
          - hot
          Salt
          Black pepper; freshly ground
   1/3 c  Golden raisins
   1/4 c  Pine nuts; toasted
     2 tb Fresh parsley; minced

 Heat the olive oil or water in a large skillet over medium heat. Add
 the shallots and ginger and cook, stirring, until the shallots are
 lightly softened, about 1 minute. Add the quinoa along with the
 cardamom, coriander, cumin, and cayenne, and stir to coat with oil.
 Stir in the hot broth and bring to a boil. Reduce the heat to low and
 season to taste with salt and pepper. Cover and cook until all of the
 water is absorbed, 12 to 15 minutes.

 Remove from the heat and stir in the raisins, pine nuts, and parsley.
 Serve hot.
