veganuary day 2565*

woke up before the rooster crowed and walked out to the barn to milk the almonds. set the pulp out to dry and turn into almond meal. added some protein powder to some fresh milk to get the day going.

started a fresh batch of sourdough. tried to make it a little wetter because the last dough was kind of dry, which made the bread pretty dense. good and chewy! but i want this batch to be lighter and fluffier. made some quick waffles with the leftover starter.

roasted a whole bunch of veggies. put the trimmings and castoffs into the pressure cooker to make some veggie stock. always turns out different depending on what goes in. this batch is pretty tasty! haven't been cooking with hot peppers as much lately, so it's less spicy than usual.

put some brown rice in the rice cooker and made a quick stir-fry with leftover roasted veggies. added a splash of the stock when the rice started to stick to the bottom of the pan.

vegan super powers fully charged, packed up my stuff and flew downtown to a coffee shop to get some writing done while sipping on a decaf oat milk cappuccino.

*found an old gopher post that claims I went vegan "at the beginning of the year" in 2018. celebrate!
