     Title: Lentil Soup

MMMMM----------------------------BASE---------------------------------
     3 c  Raw lentils; rinsed
     7 c  Water or stock
     2 ts Salt

MMMMM-------------------------VEGETABLES------------------------------
          Butter
     2 ts Garlic; minced
     1 c  Onion; chopped
     1 c  Celery; minced
     1 c  Carrots; chopped

MMMMM-------------------------SEASONING------------------------------
          Lots of black pepper
 1 1/2 c  Fresh tomatoes; chopped
     2 tb Dry red wine
     2 tb Lemon juice
 1 1/2 tb Molasses or brown sugar
     1 tb Wine vinegar

MMMMM--------------------------GARNISH-------------------------------
          Scallions; chopped
          Vinegar
          Thyme; (optional)
          Oregano; (optional)
          Basil; (optional)

 Begin this soup in the morning. It should simmer all day long.

 Simmer base ingredients, covered, for 3-4 hours.

 Steam or sauté vegetables ingredients in butter. Add to lentils after
 they've simmered 304 hours. Continue to simmer on LOW heat.

 Add the seasoning ingredients to the soup about 30 minutes before
 serving. Optionally garnish with fine herbs such as thyme, oregano,
 or basil.

 Sprinkle extra vinegar and freshly-chopped scallions onto each
 serving.
