MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Cabbagetown Cashew Chili
Categories: Chili
     Yield: 6 Servings

     2 c  Kidney beans; up to 3 c
     4 md Onions; chopped
     2    Green peppers; chopped
     2    Celery ribs; chopped
     3 cl Garlic; crushed
     1 ts Basil
     1 ts Oregano
     1 ts Cumin
     1 qt Canned tomatoes
     1 pn Black pepper
   1/2 c  Cashews; up to 1 c
     1 ts Salt
     2    Tofu cakes (optional)

 An Ithaca, NY favorite.

 Sauté vegetables until tender. Add canned tomatoes and spices and
 simmer 10 minutes. Add beans, cashews, and raisins, and cook 15
 minutes. Serve with grated cheese or add pieces of tofu for extra
 protein.
