Title: Black Bean Sauce With Jalapeños And Cilantro

Yield: 2 Cups
1 tb Olive oil -OR-
1/4 c Water
3 cl Garlic; chopped
1 Jalapeño; up to 2;
- seeded, chopped
15 oz Can black beans (1-1/2 c);
- rinsed, drained
1 tb Low-sodium tamari
1/2 ts Ground cumin
1/2 ts Ground coriander
1/4 ts Dried oregano
1/3 c Water; or more as needed
1 ts Fresh lime juice
2 tb Fresh cilantro; minced
Salt
Black pepper; freshly ground
If you can't take the heat, eliminate thhe jalapeños, and the sauce
will still be delicious. Use it over grain dishes, polenta, sautéed
tofu slices, or burgers.
Heat the oil or water in a large skillet over medium heat. Add the
garlic and jalapeños and cook for 1 minute. Stir in the beans,
tamari, cumin, coriander, and oregano, and simmer for 5 minutes to
blend the flavors.
Transfer the mixture to a blender or food processor, add the water
and lime juice, and process until smooth.
Transfer to a medium sized saucepan and add the cilantro and more
water, if necessary, to get the consistency you prefer. Season to
taste with salt and pepper. Heat over low heat, stirring, until hot.
