MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Egg Sauce
Categories: Sauces
     Yield: 2 Cups

     3 tb Butter
     3 tb Flour
     2    Eggs; hard-boiled
 1 1/2 c  Milk
   1/4 ts Dry mustard
   1/2 ts Horseradish; prepared
          Salt and white pepper to
          -taste

 Purée egg and milk together in blender.

 Melt butter. Whisk in flour. Lower heat and cook, whisking 2 minutes.

 Whisk in puréed milk and egg mixture, plus the seasonings. Simmer
 8-10 minutes, whisking frequently.

 This sauce is a superlative experience on baked fish (makes enough to
 cover four servings), it is also good on steamed, fresh vegetables
 and potatoes.
