MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Vegan Béchamel Sauce
Categories: Sauces
     Yield: 2 -1/2 cups

     1 tb Neutral vegetable oil -OR-
   1/4 c  Water
     1 sm Onion; chopped
     1 tb Dry white wine
   3/4 c  Raw cashews
 1 1/2 c  Plain unsweetened nondairy
          - milk
     1 pn Nutmeg; freshly grated
          Salt
          Black pepper; freshly ground

 Soak cashews for at least 3 hours or up to overnight, then drain.

 Heat the oil or water in a small skillet over medium-low heat. Add the
 onion, cover, and cook until softened, about 5 minutes. Do not brown.
 Stir in the wine and set aside.

 Place the drained cashews and 1 cup of the nondairy milk in a
 high-speed blender or food procesor and process until thoroughly
 smooth.

 Transfer to a medium-sized saucepan over low heat. Season with the
 nutmeg and salt and pepper to taste. Serve hot.
