Title: Summer Sunshine Salsa

Yield: 2 -1/2 cups
1 lb Ripe yellow tomatoes;
- peeled, seeded, chopped
1/4 c Onions; chopped
1 sm Yellow bell pepper;
- seeded, chopped
1 Lemon; juice of
1/4 ts Salt; or more to taste
2 tb Fresh cilantro; minced,
- (optional)
1 Fresh japapeƱo or serrano;
- minced (optional)
In a medium-size bowl, combine the tomatoes, onion, bell pepper, lemon
juice, and salt. Cover and refrigerate until ready to serve.
When ready to serve, stir in the cilantro, if using. This salsa will
keep, tightly covered, in the refrigerator for up to 5 days.
