2 1/2 lb Rome Beauty or other baking
- apples -- peeled, cored,
- coarsely chopped
2 lb Pears -- peeled, cored,
- coarsely chopped
1 c Apple cider or apple juice
1/4 c Fresh lemon juice
1/2 c Sugar
1/3 c Golden brown sugar --
- firmly packed
1 ts Ground cinnamon
1/4 ts Ground nutmeg
1 Orange peel strip (3x1/2") --
- orange part only
Position rack in center of oven; preheat to 350°. Combine first 4
ingredients in saucepan. Bring to a boil. Reduce heat; cover. Simmer
until fruit is very tender, about 15 minutes. Puree fruit mixture in
processor. Mix in 1/2 cup sugar, brown sugar, cinnamon, and nutmeg.
Transfer mixture to 8" square glass baking dish; add orange peel.
Bake uncovered until mixture is dark and thick, stirring often, about
1 hour 20 minutes. Discard peel. Can be made 1 week ahead Cover and
chill. Goes well with muffins.
