                  Cinnamon-Raisin Granola (Serves 24)

  4      c             Old fashioned oats
  1      c             Coconut -- shredded
    1/4  c             Brown sugar -- packed
    1/4  c             Vegetable oil
    1/4  c             Honey
  1      ts            Ground cinnamon
  1 1/2  ts            Vanilla extract
  1      c             Raisins

"This granola recipe makes a great late-night or after-school snack,"
explains Ida Grove, Iowa cook Tammy Neubauer. "I like that it's
nutritious, too."

In a large bowl, combine oats and coconut; set aside. In a saucepan,
combine brown sugar, oil, honey, and cinnamon; bring to a boil.
Remove from the heat and stir in vanilla. Pour over oat mixture; stir
to coat. Spread in a large shallow baking pan. Bake at 350°F for 15
to 20 minutes, stirring occasionally. Cool. Add raisins. Store in an
airtight container.

Yield: 6 Cups
