                          Baba Ganoush English

  2      lg            Eggplants
  4      cl            Garlic -- or more, minced
  2      tb            Tahini
  2      tb            Olive oil
  1      lg            Lemon -- juice of
  2      tb            Onion -- grated
  1      ts            Cumin
  1      ts            Zataar (opcional)
                       Salt & pepper -- to taste
  1      ts            Oregano
    1/2  ts            Thyme

Pierce eggplants with a fork and bake them at 400°F until tender or
broil them, turning a few times.

Let cool a little and scoop out the pulp.

Mash with a fork or use a food processor to make a paste. I prefer
the fork.

Combine with the rest of the ingredients. Correct seasonings.

Drizzle some olive oil on top.

Serve with chopped parsley and pita bread.

Note: For a smokier flavor, char eggplants over stove top flame.
