                        Holiday Appetizer Quiche

                       Crust:
  1 1/2  c             All purpose flour -- unsifted
  1 1/2  c             Butter-type crackers --
                       - finely crushed
    2/3  c             Butter flavor shortening
                       Filling:
  2      c             Swiss cheese -- shredded
    2/3  c             Ham -- cooked & chopped -OR-
    2/3  c             Sausage -- cooked & crumbled -OR-
    2/3  c             Pepperoni -- diced -OR-
                       Bacon -- cooked & crumbled
    3/4  c             Green onions and tops --
                       - thinly sliced
    1/4  c             Fresh parsley -- snipped
    1/3  c             Diced pimentos (1 jar) --
                       - well drained
  5                    Eggs
  1      c             Whipping cream
  1      c             Half and half
  1      ts            Salt
    1/4  ts            Pepper

Preheat oven to 400°F for crust, combine flour and cracker crumbs.
Cut in butter flavor shortening until mixture resembles coarse corn
meal. Sprinkle with 1/2 cup water, 1 tb at a time. Toss with fork
until crumbs are completely moistened. Press mixture into bottom of
ungreased 15x10x1" pan. Prick crust with a fork. Sprinkle Swiss
cheese, ham, onions, parsley, and pimientos evenly over crust. Beat
eggs, cream, half and half, salt, and pepper. Pour over filled crust.
Bake at 400°F for 25 to 30 minutes or until set. Cool for 5 minutes.
Cut in 1-1/2 by 2" pieces. Serve warm.

Makes 50 appetizers.

Note:

Crust may bubble during baking and need to be pricked with a fork
again.
