                          GARLIC SPINACH BALLS

  2      packages      Frozen spinach
                       (cook -- drain and chop)
  2      cups          Stuffing mix -- herb seasoned
  6                    Eggs -- beaten
  2                    Onions -- finely chop
    1/2  cup           Chopped parsley
    3/4  cup           Margarine -- melted
    1/2  cup           Parmesan cheese
    3/4  tablespoon    Garlic powder
    1/2  tablespoon    Dried thyme
                       Black pepper -- to taste

Here is the first recipe I have tried from Andy Lo Russo's new cookbook
"SING AND COOK ITALIAN".

Mix all ingredients in large bowl, make small balls, and flash
freeze. Then bake in oven for 20 minutes at 375°.

These were really good BUT being the critic I am, here are my
suggestions for the recipe.

Next time I would use fresh garlic rather than powder. I prefer a
garlic "punch". I also refrigerated these first before making balls,
it was much easier.

Not to totally desegregate Andy's recipe, but I would add a shot of
Tabasco.  Oh, these are vegetarian but BOY would they taste good
eliminating the margarine (I used butter) and adding Italian
sausage.
