Peel and grate potatoes. Allow to drain. Discard liquid. Add onions
and eggs to potatoes.
Mix together flour, salt, baking powder, and pepper and add to
potatoes. Add chicken fat or butter.
Spoon into greased medium-sized muffin tins. Fill to top. Bake at
375°F for 1 hour, until brown and crusty. Allow to stand on counter a
few minutes then run knife around edge to remove from pan. Freeze.
