     Title: Turkey Croquette

     Yield: 6 Servings

     2 c  Mashed potatoes; with added
          - milk & butter
   1/2 c  Parmesan cheese; grated
   1/2 c  Ementhal (Swiss) cheese;
          - shredded
     1    Shallot; fine chopped
     2 ts Fresh rosemary; minced -OR-
   1/2 ts Dried rosemary; crushed
     1 ts Fresh sage; minced -OR-
   1/4 ts Dried sage leaves
   1/2 ts Salt
   1/4 ts Pepper
     3 c  Turkey; cooked, fine chopped
     1 lg Egg
     2 tb Water
 1 1/4 c  Panko bread crumbs
          Butter-flavored cooking
          - spray
          Sour cream (optional)

 Heat air fryer to 350°F/175°C.

 In a large bowl, combine mashed potatoes, cheeses, shallot,
 rosemary, sage, salt, and pepper. Stir in turkey, mixing lightly
 but thoroughly. Shape into twelve 1"-thick patties.

 In a shallow bowl, whisk egg and water. Place bread crumbs in
 another shallow bowl. Dip croquettes in egg mixture, then in bread
 crumbs, patting to help coating adhere.

 Working in batches, place croquettes in a single layer on greased
 tray in air-fryer basket; spritz with cooking spray. Cook until
 golden brown, 4 to 5 minutes. Turn; spritz with cooking spray. Cook
 until golden brown; 4 to 5 minutes. If desired, serve with sour cream.
