     Title: Bleucheese Sandwich (Rainbow Sandwich)

     4 sl Rye or pumpkernickel bread
     4 sl Mild; white cheese
          Prepared mustard

MMMMM-------------------------VEGETABLES------------------------------
          Butter
     2    Stalks Broccoli
     1 md Bell pepper; red or green
     1 c  Raw cabbage; shredded
     1 c  Carrot; shredded
     1 c  Beet; shredded
     1 sm Red onion

MMMMM--------------------------DRESSING-------------------------------
     1 c  Bleu cheese
   1/2 c  Yogurt
   1/2 c  Mayonnaise
     1 tb Lemon juice
     2 tb Vinegar

 This sandwich would win the approval of Henri MAtisse, and of fans of
 Rainbows as well.

 Set bread aside.

 Slice broccoli into about 8-12 thin spears. Cut bell pepper into thin
 strips. Sauté these in a little butter until tender. Put these aside.
 Grate cabbage, carrot, and beet. Thinly slice red onion. Keep all of
 these cut and shredded vegetables in separate piles or containers.

 Combine dressing ingredients and purée together in the blender. Add
 salt and pepper to taste.

 Toast the bread. Spread it with mustard. Distribute the broccoli and
 peppers, laying them down flat. Pile on layers of shredded raw
 vegetables, all except the onion. Place a slice of cheese on top.
 Stick the sandwiches under the broiler until the cheese melts. Ladle
 lots of bleu cheese dressing. Top with red onion slices.

 Serve at once.
