3 tb Olive oil
1/2 c Onions; minced
1 c Tomato sauce
1/2 ts Oregano
1/4 ts Italian seasoning
3/4 c Mushrooms; sliced
1/2 md Zucchini; thinly sliced
1/2 c Red pepper; diced
4 Corn tortillas (6 or 8")
1/2 c Black olives
1 c Mozzarella cheese; grated
1/2 c Green pepper; diced
Heat 2 tb oil in heavy medium saucepan over medium heat. Add onions
& cook until golden, stirring occasionally, about 5 minutes. Stir
in tomato sauce, garlic, oregano & italian seasoning. Simmer until
thickened, about 5 minutes. Heat remaining 1 tb oil in skillet over
medium heat. Add mushrooms & zucchini & cook until tender, stirring
occasionally, about 5 minutes. Set aside. Preheat oven to 350°F.
Place tortillas on baking sheet & bake until crisp, about
4 minutes. Spread about 1/4 c sauce over each. Sprinkle each with
1/4 c cheese. Top pizzas with mushrooms, zucchini, peppers & olives.
Bake until cheese melts, about 5 minutes. Serve.
