MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Mexican Chicken Fajita Pizza

     Yield: 6 Servings

13 3/4 oz Refrigerated pizza crust
     8 oz Chicken; boned, skinned,
          - in thin strips
     1 ts Oil; divided
     1 md Onion; sliced
     1 md Red bell pepper; sliced
     1 md Green bell pepper; sliced
     1 ts Chilli spice mix
   1/2 ts Ground cumin
     1 cl Garlic; minced
   1/4 c  Chunky salsa
     2 c  Shredded Mexican cheese
          - blend
     1 tb Fresh cilantro; minced
          Sour cream (optional)
          Additional salsa
          - (optional)

 Unroll crust into a 15x10x1" baking pan coated with cooking spray;
 flatten and build up edge slightly.

 Bake @ 425°F/218°C until edge is lightly browned, 8 to 10 minutes.

 Meanwhile, in a large skillet coated with cooking spray, cook
 chicken over medium heat in 1/2 ts oil until no longer pink, 4 to
 6 minutes; remove and keep warm.

 In the same pan, saute the onion, peppers, chili powder, and cumin
 in remaining 1/2 ts oil until crisp-tender. Add garlic; cook
 1 minute longer. Stir in salsa and chicken.

 Sprinkle half the cheese over prepared crust; top with chicken
 mixture and remaining cheese. Bake until crust is golden brown and
 cheese is melted, 8 to 10 minutes. Sprinkle with cilantro. Serve
 with sour cream and additional salsa if desired.
