                           Crawfish au Gratin

    1/2  c             Margarine
    1/2  c             Celery -- chopped
    1/2  c             Bell pepper -- chopped
    1/2  oz            Parsley flakes
    1/2  c             Onion -- chopped
  1                    Pkg crawfish tails
  1      ts            Salt
    1/2  ts            Pepper
    1/2  lb            Cheddar cheese
    1/2                Jar cheese sauce
  1      c             Milk
  2                    Egg yolks -- beaten
  1      ts            Corn starch
  1      tb            Water

In saucepan combine margarine, celery, bell pepper, parsley, and
onion over low heat. Saute for 5 minutes. Lower heat and simmer for
10 minutes. Add crawfish talks, salt, and pepper. Let simmer for
10 minutes. In double boiler combine cheese, cheese, sauce, milk, and
egg yolks. Mix corn starch with water. Add to cheese mixture and let
boil for 5 minutes. Pour crawfish mixture into cheese mixture and
blend well. Pour into casserole dish. Bake at 350°F for 10 minutes.
Serve hot.
