MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Grilled Pork Chops With Spicy Fennel Relish

     Yield: 4 Servings

   1/2 c  Lemon juice; divided
   1/2 c  Extra virgin olive oil;
          - divided
     2 cl Garlic; minced
 1 1/2 ts Salt, divided
     1 ts Ground cumin
     4    Bone-in pork loin chops
          - (8 oz ea); 1" thick
     1 md Red bell pepper; halved
   1/2 lg Onion; in 1/2" slices
   1/2 md Fennel bulb; in 1/2" slices
   1/4 c  Green olives; pitted,
          - coarse chopped
     2 tb Fresh basil; chopped
   1/8 ts Crushed red pepper flakes

 In a shallow dish, combine 1/4 cup lemon juice, 1/4 cup oil,
 garlic, 1 ts salt and cumin. Add pork; turn to coat. Let stand
 while preparing vegetables.

 Place red peppers, onion and fennel in grill basket; brush with
 2 tb oil. Grill, covered, over medium-high heat until lightly
 charred, 4 to 5 minutes. Remove to a cutting board and finely chop.
 In a large bowl, combine vegetables, olives, basil, remaining
 1/4 cup lemon juice, remaining 2 tb oil, remaining 1/2 ts salt and
 red pepper flakes.

 Drain and discard marinade from pork. Grill pork, covered, over
 medium-high heat until a thermometer reads 145°F, 6 to 8 minutes on
 each side. Let stand 5 minutes before serving with relish.
