MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Zucchini Boats

     Yield: 4 Servings

     2 md Zucchini (8")
   3/4 lb Ground beef
     1 sm Onion; chopped
   1/2 c  Fresh mushrooms; chopped
   1/2 c  Sweet red pepper; chopped
   1/2 c  Green pepper; chopped
     1 c  Cheddar cheese; shredded,
          - divided
     2 tb Ketchup
          Salt & pepper
          Fresh parsley; minced (optional)
          Marinara sauce (optional)

 Trim ends off zucchini. Cut zucchini in half lengthwise; scoop out
 pulp, leaving 1/2" shells. Finely chop pulp.

 In a skillet, cook beef, zucchini pulp, onion, mushrooms, and
 peppers over medium heat, breaking beef into crumbles, until meat
 is no longer pink; drain. Remove from the heat. Add 1/2 cup cheese,
 ketchup, salt, and pepper; mix well. Spoon into the zucchini
 shells. Place in a greased 13x9" baking dish. Sprinkle with
 remaining 1/2 cup cheese.

 Bake, uncovered, @ 350°F/175°C until zucchini is tender, 25 to
 30 minutes. If desired, garnish with minced parsley and serve with
 marinara sauce.
