MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Deep-Fried Deviled Eggs

     Yield: 24 servings

    12 lg Eggs; hard-boiled
   1/4 c  Mayonnaise
     2 ts Dijon mustard
     1 ts Chives: minced
   1/4 ts Salt
   1/4 ts Coarse ground pepper
   1/8 ts Sugar
     1 c  A-P flour
     3 lg Eggs; beaten
 1 1/2 c  Italian-style panko bread
          - crumbs
          Oil; for deep-fat frying

 Cut eggs lengthwise in half. Remove yolks, reserving whites. In a
 small bowl, mash yolks. Stir in mayo, Dijon, chives, salt, pepper,
 and sugar. Spoon or pipe into egg whites. Level filling; cover and
 freeze eggs on a waxed paper-lined baking sheet until firm, about
 30 minutes.

 In a shallow bowl, whisk eggs. Place flour and panko in separate
 shallow bowls. Dip eggs in flour to coat both sides; shake off
 excess. Dip in egg mixture, then in panko, patting to help coating
 adhere.

 In an electric skillet or deep fryer, heat oil to 350°F/175°C. Fry
 eggs, a few at a time, until golden brown, 2-3 minutes. Drain on
 paper towels. If desired, garnish with additional minced chives.
