     Title: Adzuki Bean Pie

     Yield: 6 Servings

     1    Pie crust (9")
     1 c  Dry adzuki beans; cooked
          - until soft
          Salt and black pepper;
          - to taste
     1 tb Mugi miso
     2 tb Tomato paste
     1 tb Butter
   1/2 ts Thyme
   1/2 ts Basil
   1/2 ts Sage
   1/2 ts Marjoram
   1/2 ts Ground anise seed
          Sesame seeds

 Make the pastry, roll it out, and place it in a shallow 8" pie dish,
 saving 1/3rd for the top. The recipe is for a 9" crust, so this will
 be enough. When the beans are ready, strain them and add salt,
 pepper, miso, tomato paste, butter, and herbs. Fill the pastry and
 cover with the remaining 1/3rd of the dough, rolled out to top the
 pie. Sprinkle with sesame seeds. Bake 25 to 30 minutes at 350°F
 until the pastry is golden.

 Adzuki bean pie is great with potatoes, mashed, boiled, or fried.
 Save the stock from the beans and make some gravy, too.
