10 oz Frozen chopped spinach
1 tb Oil
1 lb Ground beef
1 md Onion -- chopped
1 cl Garlic -- minced
1 lb Spaghetti sauce with mushrooms
1 c Tomato sauce (8 oz)
1/2 ts Salt
1/8 ts Pepper
2 c Macaroni -- cooked
1 c Cheddar cheese -- shredded
1/2 c Soft bread crumbs
2 Eggs -- well beaten
1/4 c Oil
Cook spinach according to package directions-drain, reserving liquid.
Add water to make 1 cup; set aside. Heat 1 tb oil on medium high
heat. Saute beef, onions, and garlic. When lightly brown, add spinach
liquid, spaghetti sauce, tomato sauce, salt, and pepper. Simmer for
10 minutes. Preheat oven to 350°F. Combine spinach, macaroni, cheese,
bread crumbs, eggs, 1/4 cup oil. Pour this mixture into a greased
13x9x2" baking dish. I use two smaller round dishes in order to
freeze one. Top with meat sauce. Bake for 30 minutes.
Yield: 12 Servings
Freezes great. One of my kids has an aversion to anything green, but
he still likes this!
