MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Zucchini Pizza Casserole

     Yield: 8 servings

     4 c  Zucchini; unpeeled, shredded
   1/2 ts Salt
     2 lg Eggs
   1/2 c  Parmesan cheese; grated
     2 c  Mozzarella cheese; shredded,
          - divided
     1 c  Cheddar cheese; shredded,
          - divided
     1 lb Ground beef
   1/2 c  Onion; chopped
    15 oz Can Italian tomato sauce
     1 md Green or red bell pepper;
          - chopped

 Set oven @ 400°F/205°C.

 Place zucchini in colander; sprinkle with salt. Let stand
 10 minutes, then squeeze out moisture.

 Combine zucchini with eggs, Parmesan and half the mozzarella and
 cheddar cheeses. Press into a greased 13x9" or 3 qt baking dish.
 Bake 20 minutes.

 Meanwhile, in a large saucepan, cook beef and onion over medium
 heat until meat is no longer pink, breaking meat into crumbles;
 drain. Add tomato sauce; spoon over zucchini mixture. Sprinkle with
 remaining cheeses; add green pepper. Bake until heated through,
 about 20 minutes longer.
