2 tb Margarine
2 1/3 tb Flour
1 ts Salt
1 1/3 c Milk
1 c Spinach;
- chopped, cooked, drained
1/2 ts Nutmeg
1 1/2 c Vegetable spaghetti
1/2 c Cottage cheese
2 Eggs; hardboiled, sliced
Parmesan cheese
Make a white sauce by melting margarine in a saucepan, then adding
flour and salt. Add milk gradually and stir until thickened. Combine
1 cup of the sauce with spinach and nutmeg. Into a 1 qt casserole
dish pour the remaining sauce. Layer the spinach mixture, spaghetti,
cottage cheese, and egg slices. Sprinkle with Parmesan. Bake at
350°F for 30 minutes.
