MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Zucchini Roll-Ups

     Yield: 3 Servings

     1 c  Ricotta cheese
 1 1/2 ts Italian seasoning; divided
   1/4 ts Salt
   1/4 ts Pepper
     2 md Zucchini
     4    Plum tomatoes; seeded,
          - chopped
     8 oz Can tomato sauce
     1 tb Tomato paste
          Parmesan cheese; shredded
          - (optional)

 Set oven @ 425°F/218°C.

 In a small bowl, combine ricotta, 1/2 ts Italian seasoning, salt,
 and pepper. Slice zucchini lengthwise into twelve 1/8"-thick
 slices. Top each slice with a rounded 1 tb cheese mixture. Roll up
 and secure with toothpicks; place seam side down in an ungreased 8"
 baking dish.

 Combine tomatoes, tomato sauce, tomato paste, and remaining 1 ts
 Italian seasoning; pour over rolls. Cover and bake until bubbly, 20
 to 25 minutes. Remove toothpicks before serving. If desired,
 sprinkle with Parmesan cheese.
