MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Wild Rice Zucchini A La Mode

     Yield: 8 Servings

     1 c  Onion; chopped
     1 cl Garlic; minced
     3 tb Butter
 2 1/2 c  Chicken broth
     6 oz Long grain & wild rice mix
     1 c  Zucchini; coarsely shredded
     1 tb Lemon juice
     8 sl Tomatoes; 1/2" thick

 Saute onion & garlic in butter until tender. Add chicken broth, rice &
 contents of seasoning packet. Bring to boil; reduce heat. Cover
 tightly & cook over low heat until all liquid is absorbed, about 25
 minutes. Cook zucchini in small amount of boiling salted water for 2
 minutes, drain, & press out excess moisture. Stir zucchini & lemon
 juice into cooked rice. Spoon about 1/2 cup rice mixture onto each
 tomato slice. Bake in upper part of oven at 375°F for 10 minutes or
 in microwave on "full power" for 1 minute.
