3 lg sweet potatos
2 1/2 tb Butter -- softened
3 tb Brown sugar -- firmly packed
3 tb Orange juice
3 tb Pineapple-orange marmalade
2 ts Fresh ginger -- finely grated
1 ts Salt
Topping:
1/2 c Rolled oats
1/2 c Brown sugar -- firmly packed
1/4 c Flour
1/2 ts Cinnamon
1/4 c Butter
Prick potatoes and microwave on high until soft. Scoop flesh into
large bowl and mash with butter, sugar, juice, marmalade, ginger, and
salt. Spread mixture evenly in 2 qt baking dish sprayed with
non-stick spray.
Preheat oven to 400°F.
Using pastry cutter, combine topping ingredients until mixture
resembles coarse meal. Sprinkle topping over potato mixture and bake
in middle of oven until topping is lightly browned, about 25 minutes.
