Title: Brandy Glazed Winter Squash With Apple Pecan Topping

1 lg Winter squash
1 sm Onion; chopped
1/2 c Brandy
2 tb Natural sugar
2 tb Olive oil
1 tb Water
Salt
Black pepper; freshly ground
1 lg Granny Smith apple;
- peeled, cored, chopped
1/2 c Pecans; chopped
Preheat the oven to 400°F. Lightly oil a large baking dish. Halve,
seed, and peel the squash, then cut into 2" chunks. Place in a single
layer in the prepared baking dish.
Sprinkle the onion over the squash and pour on the brandy. Add 1 tb
sugar, 1 tb olive oil, and the water. Season to taste with salt and
pepper. Cover tightly and bake until soft, 30 to 40 minutes. Gently
turn the squash at least once during cooking for even browning.
In a bowl, combine the apple, pecans, the remaining 1 tb olive oil,
and the remaining 1 tb sugar. Sprinkle the apple mixture over the
squash, return to the oven, and bake, uncovered, until the top is
bubbly and golden brown, about 15 minutes. Serve hot.
