     Title: Beets With Parsley Butter
Categories: Beets, Vegetarian
     Yield: 2 Servings

     2 lg Beets (3 to 4 md); cooked
     1 tb Butter; for sautéing
          Salt; to taste
          Black pepper; to taste,
          - freshly ground
     2 tb Fresh parsley; fine chopped

 Peel and chop the beets. Melt the butter in a saucepan and briefly
 sauté the beets. Add salt and serve with a sprinkle of black pepper
 and the parsley.
