MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Twice-Baked Potatoes

     Yield: 6 Servings

     6 lg Baking potatoes
   1/2 c  Butter; softened
   3/4 c  Whole milk or
          - heavy whipping cream;
          - up to 1 c
     3 tb Cooked bacon; crumbled
     3 tb Onion; fine chopped
     1 tb Chives; minced
   1/2 ts Salt
     1 ds Pepper
 1 1/2 c  Cheddar cheese; shredded,
          - divided
          Paprika

 Scrub and pierce potatoes. Bake @ 375°F/190°C for 1 hour or
 until tender. When cool enough to handle, cut a thin slice off the
 top of each potato and discard. Scoop out the pulp, leaving thin
 shells.

 In a large bowl, mash the pulp with butter. Stir in the milk,
 bacon, onion, chives, salt, pepper, and 1 cup cheese.

 Spoon into potato shells. Bake, uncovered, at 375°F for
 20 minutes. Sprinkle with remaining 1/2 cup cheese and paprika.
 Bake 5 minutes longer or until cheese is melted.
