4 c Potatoes -- peeled,
- thinly sliced
1 c Cottage cheese, 1% Lowfat
1/4 c Egg substitute
1 ds Ground red pepper
Pam® cooking spray (1 second)
1/2 c Low-fat cheddar cheese
1/4 c Green onions -- sliced
1/4 c Fresh parsley -- chopped
Cook potatoes in boiling water to cover 8 to 10 minutes or just until
tender. Drain.
Place cottage cheese, egg substitute, and red pepper in container of
an electric blender or food processor; process 1 minutes or until
smooth. Set aside.
Place half of potatoes in an 8" square baking dish coated with
cooking spray. Layer with half each of cheese, green onions, parsley,
and cottage cheese mixture. Repeat layers with remaining ingredients,
reserving parsley.
Bake, uncovered, at 375°F for 25 to 30 minutes or until lightly
browned. Sprinkle remaining parsley over top.
