     Title: Arugula Broccolini Salad

     Yield: 2 Servings

   120 g  Arugula leaves; (1 box)
    15    Broccolini stalks;
          - up to 20, 2" lengths
     2 tb Extra virgin olive oil
          Salt
     4 tb Balsamic dressing;
          - up to 6 tb

 Toss broccolini with olive oil, salt, and roast 15 minutes at
 210°C/425°F.

 Layer arugula with broccolini, drizzle as much balsamic & olive oil
 emulsion as you prefer, and serve with peri-peri or roast chicken.
