Amount Measure Ingredient -- Preparation Method

1 1/2 c Cooked brown or white rice --
- cold
1/2 c Vanilla low-fat yogurt
8 oz Can pineapple tidbits --
- drained, 1 ts juice reserved
2 Kiwifruit -- peeled and sliced
1 md Mango (1 c) -- peeled, chopped
6 1/8 oz Can white tuna in water --
- drained and flaked
1 tb Coconut -- toasted
Mix rice, yogurt, and reserved pineapple juice in medium bowl. Cover
and refrigerate 1 to 2 hours to blend flavors. Cut kiwifruit slices
into 1/4ths. Gently stir kiwifruit, pineapple, mango, and tuna into
rice mixture. Sprinkle with coconut.
