4 c Water
1 c Wild rice
1 c Long grain brown rice
8 md Mushrooms; chopped
3/4 c Ripe olives; chopped
1 md Yellow onion; chopped
3 tb Safflower oil
1/2 c Raw cheddar; cut into small
- pieces
2 tb Vegetable salt
1/2 Green pepper; chopped
Pour boiling water in large baking dish or casserole dish. Add wild
rice and brown rice, stirring in well. Cover and place in oven at
about 375°F. Let bake for 25 to 30 minutes or until rice is barely
done. Add mushrooms, olives, onion, green pepper, cheddar, oil, and
salt. Stir and mix well. Cover and allow to continue baking another
20 minutes at 350°F.
