Title: Green Rice And Zucchini

1 1/2 lb Zucchini
3/4 c Parsley; chopped
1 Lemon; juice of
1 c Low-fat cottage cheese
1 ts Basil
1/2 c Cheddar cheese; grated
1 ts Salt
1 pn Pepper
2 tb Vegetable oil
2 c Cooked brown rice
Preheat oven to 350°F. Slice zucchini in 1/4" rounds. Steam until
done but still firm. Mix rice with lemon juice, parsley, &
seasonings. In a greased casserole dish, make a layer each of rice
mixture, cottage cheese, & zucchini. Top with grated cheese. Bake
uncovered for 15 minutes.
