                                Risotto

  1      md            Onion -- minced
    1/4  c             Margarine
  1      c             Long grain rice
  2      c             Chicken broth
    1/4  c             Parmesan cheese -- grated

Saute onion in margarine until tender. Add rice, stirring until
margarine is absorbed. Stir in broth or chicken bouillon. Put mixture
into 2 qt casserole. Bake in 350°F oven uncovered for 30 minutes or
until liquid is absorbed and rice is tender.

Remove from oven. Stir in parmesan cheese until well blended. Serve
as an accompaniment to chicken or veal.
