     Title: Hearty Rice Dressing

     Yield: 50 servings

     3 lb Ground beef
     2 lb Ground pork
     2 lg Onions; chopped
     3    Celery ribs; chopped
     1 lg Bell pepper; chopped
     4 oz Jar diced pimientos;
          - drained
     5 c  Water
21 1/2 oz (2 cans) cream of chicken
          - soup; undiluted
    21 oz (2 cans) French onion soup
10 3/4 oz Can cream of mushroom soup;
          - undiluted
     2 tb Tony Chachere's Creole
          - seasoning
     1 ts (ea) salt & pepper
   1/2 ts Cayenne pepper
     4 c  Uncooked long grain rice

 Combine beef, pork and onions. Divide mixture evenly
 among several large Dutch ovens or stockpots. Cook over
 medium heat until meat is no longer pink, breaking it
 into crumbles; drain.

 In a large bowl, combine celery, green pepper and
 pimientos. Add water, soups and seasonings. Stir into
 the meat mixture, dividing vegetable-soup mixture evenly
 among the meat mixtures. Bring each to a boil; stir in
 rice.

 Set oven @ 350°F/175°C.

 Carefully transfer mixtures to 3 greased 13x9-in. baking
 dishes. Cover each and bake for 30 minutes; stir. Cover
 and bake 30-40 minutes longer or until rice is tender.
