MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Deep South Jalapeno Cheese Grits

     Yield: 8 Servings

     4 c  Water
     1 ts Salt
     1 c  Quick-cooking grits
   1/2 ts Onion powder
   1/2 ts Garlic powder
     2 lg Eggs
     3 c  Sharp Cheddar cheese;
          - shredded, divided
     2    Jalapenos; seeded,
          - fine chopped
     3 tb Unsalted butter
     1 ts Worcestershire sauce
     1 ts Cajun seasoning
   1/2 ts Coarse ground pepper
     1 ds Hot pepper sauce

 Set oven @ 350°F/175°C.

 In a large saucepan, bring water and salt to a boil. Slowly stir in
 grits, onion, and garlic powders. Reduce heat to medium-low; cook,
 covered, until thickened, about 5 minutes, stirring occasionally.

 In a large bowl, whisk a small amount of hot grits into eggs;
 return all to pan, whisking constantly. Stir in 2 cups Cheddar,
 jalapenos, butter, Worcestershire sauce, Cajun seasoning, pepper,
 and hot sauce. Pour into a greased 2 qt baking dish. Sprinkle with
 remaining 1 cup cheddar.

 Bake until cheese is browned, 40 to 45 minutes. Garnish with
 additional jalapenos.
