1 1/2 c Brown lentils
1 c Dry long-grain rice
3 c Chicken or vegetable broth
2 lg Onions -- halved, peeled, sliced
1/2 c Olive oil
4 tb Butter
Salt and pepper -- to taste
Cook lentils in 4 cups of boiling water until tender, 10 to
15 minutes. Drain. Place lentils in large saucepan; add rice and
chicken or vegetable broth. Bring to a boil and immediately lower to
a simmer; simmer until all liquid has evaporated and rice is tender.
