3 lb Firm-fleshed fish -- cleaned
1/2 c Oil, shortening, or butter
Salt -- to taste
2 lg Onions
4 lg Tomatoes -OR-
1 c Canned tomatoes -- drained
1 c Water -- boiling
Parsley and/or fresh mint
Lemon wedges (optional)
Prepare the fish as for broiling. Rub inside and outside with oil and
salt lightly. Broil under low heat turbing when inner side is brown,
then brown outer side. Place the fish in a long baking dish, cover
with sliced onions and tomatoes. Sprinkle lightly with salt and bake
20 minutes at 400°F. Then add 1 cup boiling water and baste. Bake 5
to 10 minutes longer. Serve either hot or cold, garnished with
parsely and/or fresh mint. Wedges of lemon may be added.
